every friday, i fill a canvas tote with squash - all kinds. i’ve yet to taste one that’s not delicious. apparently i look like a human squash guide because every week someone stops me to ask: have you tried this variety, should i roast or steam, what temperature should i set my oven, how long should i cook it, which one is best for soup or pie … along those lines. thanks to epicurious - a guide to winter squash. my favorites: 8, 9, 10. this morning, i simmered oatmeal with chopped dates topped with roasted squash and hemp milk. goodness.
